Hosting season
Winter is hosting season in Dubai. The weather is perfect, the garden finally gets used, and everyone wants to do dinner at home. I've set up a lot of evenings like this, and they almost always go well or badly for the same reasons.
Start with the guest list, for the gate
In most gated communities, and on the Palm especially, every guest and every vendor needs to be registered with security in advance. Send the list a day before, with names and car plates if needed. Add every vendor too: the chef, the florist, the waiters, the DJ. One missing name and someone is stuck at the gate while the evening starts without them.
One timeline, shared with everyone
Write one simple timeline: vendor arrival times, setup, when guests arrive, when dinner is served, when the music stops. Send the same version to every vendor. Most problems come from people working off different plans.
Vendors arrive earlier than you think
Florals and table setup take longer than people expect. Plan for vendors to arrive at least 4–5 hours before guests for a proper dinner setup.
Think about the neighbours
Villas are close together in most communities. Keep music at a reasonable level, especially later at night, and check whether your community has its own rules on noise or events. A quick word with the neighbours beforehand goes a long way.
Walk through as a guest
An hour before doors open, walk in the way a guest would: from the entrance, through the house, to the table. Check the lighting, the bathrooms, the temperature and the parking. You'll always find one or two small things to fix.
Have a plan for the end
Who clears up, when vendors collect their equipment, and when the staff finish. The evening isn't over when the last guest leaves.
A good dinner at home should feel easy for the host. That only happens when everything around it is planned.
